  • Ramen


    Ramen is a noodle soup dish and perhaps one of the most popular Japanese dishes. There are many flavours of ramen, such as Shoyu (soy sauce) ramen, Miso ramen, Tonkotsu (pork bone) ramen and so on. Common toppings are Chashu (braised pork), Negi (green onion) and Nori (dried seaweed).

  • Gyoza


    Gyoza is a dumpling using wrapping thing dough to hold the inner ingredients. Most commonly, minced pork, cabbage, Garlic and Leek. The origin of Gyoza is from China but it has evolved uniquely in Japan and now quite different from the Chinese one.

  • Sake


    Japanese popular alcoholic drink must be Sake, or called Nihonshu, made from fermented rice. The foundation of good sake is quality rice, clean water, koji mold and yeast. Premium sake differentiates itself in quality of ingredients and production process, so that flavors ranges light and crisp to richer, fruity notes.

Cooking Class Information

When I started my cooking classes in my studio, I asked my guests what was your favorite Japanese food throughout your stay, and 95 percent of them said, “Ramen.” And, I thought, where is vegetarian ramen then? I have never seen one in Tokyo back then.I have decided to create the best vegetarian/vegan ramen recipe, tried new recipes, and have taken classes about Japanese vegan cooking classes. Then, I came up with this delicious recipe, I love it! Ramen broth, which is the spirit of ramen itself, uses lots of different kinds of mushrooms, ginger, and garlic for kick. And, tare, seasoning for this ramen is tahini, miso, and fermented chili paste. The recipe is made for home cooking purposes, absolutely flavorful and addictive. We will cook it all from the beginning within the class timeframe. Ramen noodles are store-bought as well as gyoza wrappers. While we are making broth, we will be preparing lots of gyoza filled with umami dried shiitake mushrooms. You will be doing it many times after you learn good tips in this class. The goal for this class is to grasp that ramen consists of three important ingredients: flavorful stock, seasoning, and fat. For this dish it is tahini.

Sorry, this class cannot be a combination of meat base ramen. I have a ramen experience as well ;-)
