 We will make a savory broth from chicken bones and vegetables, then combine it with ramen noodles and toppings. Shoyu ramen is one of the most classic and widely loved types in Japan.

    Ramen is a noodle soup dish and perhaps one of the most popular Japanese dishes. There are many flavours of ramen, such as Shoyu (soy sauce) ramen, Miso ramen, Tonkotsu (pork bone) ramen and so on. Common toppings are Chashu (braised pork), Negi (green onion) and Nori (dried seaweed).

Cooking Class Information

this experience, you will learn how to make Shoyu Ramen, one of the most popular and traditional styles of ramen in Japan. “Shoyu” means soy sauce, and this ramen features a rich, clear broth flavored with a savory soy sauce base. It’s a perfect balance of umami, saltiness, and warmth—comfort food loved by locals all over the country.

We will start by preparing the soup from scratch using chicken bones, vegetables, and aromatic ingredients like ginger and garlic. You will learn how to extract deep flavors to make a delicious, homemade broth.

Next, we’ll cook the noodles and prepare a variety of traditional toppings such as:

Chashu – tender, slow-cooked pork belly with sweet and savory flavor

Ajitama – soft-boiled eggs marinated in soy sauce and mirin

Menma – seasoned bamboo shoots with a satisfying crunch

Negi – finely sliced green onions for a fresh kick

Optional: corn, seaweed, or other local toppings

Each guest will assemble their own customized bowl of ramen, so you can choose your favorite toppings and enjoy your own creation.

For those who are interested, I also offer a side dish of handmade Gyoza (Japanese pan-fried dumplings), which we can prepare and cook together.

This is a hands-on, beginner-friendly experience—no previous cooking skills required. I’ll guide you step-by-step and share cooking tips, as well as stories behind ramen culture in Japan. It’s not just about food—it’s about connecting through flavors and sharing the joy of Japanese home-style cooking.

料理教室は、東京都三鷹市の静かな住宅街にある私の自宅で行っています。最寄り駅からは徒歩12分ほどとアクセスも便利です。清潔で落ち着いた空間で、リラックスしながら料理を楽しんでいただけます。季節によっては小さな庭のハーブを使った料理もご紹介します。
