    Ramen

    Ramen is a noodle soup dish and perhaps one of the most popular Japanese dishes. There are many flavours of ramen, such as Shoyu (soy sauce) ramen, Miso ramen, Tonkotsu (pork bone) ramen and so on. Common toppings are Chashu (braised pork), Negi (green onion) and Nori (dried seaweed).

  • Gyoza

    Gyoza

    Gyoza is a dumpling using wrapping thing dough to hold the inner ingredients. Most commonly, minced pork, cabbage, Garlic and Leek. The origin of Gyoza is from China but it has evolved uniquely in Japan and now quite different from the Chinese one.

Create two bowls of Japanese ramen from scratch using:
Kombu kelp
Shiitake mushrooms
Seasonal Kyoto vegetables
Homemade vegan toppings
You’ll learn how to develop deep umami without any animal products.

2. Handmade Vegan Gyoza
Learn the folding, seasoning, and frying techniques to create crispy, juicy gyoza filled with local vegetables.
This is one of the most loved parts of the class!

3. Aritsugu Knife Experience(Exclusive)
During the cooking process, you can try using Aritsugu knives, the legendary Kyoto knife brand from Nishiki Market.
These knives cannot be test-cut in the store —
but you can experience their sharpness.

The cooking class with Satoru and Akiko was one of the highlights of our trip! We learned -step by step - how to make two different types of ramen and also the best Gyozas we have had in Japan. We were able to do most things ourselves!! We were also given the recipes typed out to take home. It was a great half-day, because we had the great cooking lesson and then were able to spend some time in the beautiful area where they live: Arashiyama. Everything was easy, to get there and Akiko was waiting for us at the station. Very, very recommended!!
