1. Chirashi-zushi (Scattered Sushi)
Chirashi-zushi is a colorful "scattered" sushi served in a bowl or on a plate. Unlike nigiri sushi, a variety of ingredients are beautifully arranged over a bed of vinegared sushi rice.
In my class, we decorate it with shredded egg crêpes, seasoned vegetables, and seafood (or fresh seasonal toppings). It’s like an edible jewel box and is often served during traditional Japanese celebrations!
2. Tonjiru (Pork and Vegetable Miso Soup)
Tonjiru is a hearty, savory miso soup packed with sliced pork and root vegetables. While standard miso soup is light, Tonjiru is a satisfying dish that warms the body from the inside out.
We use ingredients like daikon radish, carrots, and burdock root to create a deep, rich umami flavor. It is a soul food that represents the comforting taste of a Japanese home.
3. Warabi-mochi (Bracken Starch Dumplings)
Warabi-mochi is a traditional Japanese wagashi (sweet) with a unique, jelly-like chilled texture. It is made from bracken starch and is famously translucent and chewy.
We serve it with a generous dusting of Kinako (roasted soybean flour). It’s a refreshing and elegant dessert that offers a true taste of Japanese summer and tradition.
In this cooking class, we will cook Chirashi-zushi, Tonjiru, and Warabi-mochi together!
Chirashi-zushi is a beautiful "scattered" sushi. Unlike the typical hand-pressed sushi, we arrange various colorful ingredients on top of a bed of sushi rice.
We will start by preparing the sushi rice from scratch. You can learn the traditional way of mixing sushi vinegar into the rice using a Japanese fan to make it shiny and delicious! Then, we will decorate it with shredded egg, vegetables, and seafood. It looks like a jewelry box!
Next, we will make Tonjiru, a type of Japanese soul food. It is a hearty miso soup with sliced pork and many kinds of vegetables.
We will cut the vegetables together and simmer them to bring out their natural sweetness. It is much more filling and flavorful than standard miso soup. You will love the rich "Umami" taste!
Finally, we will make Warabi-mochi for dessert. This is a traditional Japanese sweet with a unique, jelly-like texture.
We will stir the ingredients over the heat until they become clear and bouncy. It’s a very fun and magical process! We enjoy them with "Kinako" (roasted soybean flour) and sweet dark syrup.
