    Nigiri Sushi

    Sushi (寿司, 鮨) is a Japanese dish of specially prepared vinegared rice (鮨飯 sushi-meshi), usually with some sugar and salt, combined with a variety of ingredients (ネタ neta), such as seafood (most commonly and often raw), vegetables, and occasionally tropical fruits. Styles of sushi and its presentation vary widely, but the key ingredient is "sushi rice", also referred to as shari (しゃり), or sumeshi (酢飯).

    Inari Sushi

    Inarizushi is stuffed in seasoned Aburaage tofu pouch. Inarizushi is technically sushi, but it is not something you order at nice sushi restaurants. It is easily found at supermarket delis, but, as you know, home made is the best. Inarisushi is a very casual food and a perfect lunch for picnics because it’s best eaten right from your hands.

Our visit with Eiko was like nothing else. Her bubbly personality was a lovely presence to be with. She met us at the station and was quick to bring us on a journey to her home, excited to hear where we had been in Japan and although not very fluent in english, she was easy to understand to make conversation. Upon arrival she was super prepared and unlike other cooking classes we have taken before (which can take hours before you eat) we were sitting at her table beginning our first serving of sushi. She welcomed us with Saki which she was happy to partake in the consumption. Once this serving was over, we were back to the kitchen to prepare the rolled sushi. Eiko was happy to take photos of us for memories and got some for herself as well. There were plenty of vegetarian options which was critical for our diet and difficult to find in our travels. When we thought it was time to say goodbye, she was pleasant in offering us gifts and to go packages for the left overs. Her warm energy was constant throughout our visit. When it was time to say goodbye, she insisted that if we had the time, to join her back to her karaoke bar which was a short walk near the train station. She offered a drink and we all shared laughs and great memories singing Karaoke together. It was special to bridge the language barrier over music together. The most shocking part. She amazed us with Spanish song that she loves so much and danced away. We were in awe at the talents of this lady, the skills just kept coming. My wife and I are thankful we had this experience during our visit. It was an authentic glimpse of Eiko’s world. Would certainly recommend to anybody considering this class Thank you, Eiko!
