Vegan Ramen & Vitamin Loaded Gyoza Workshop

My class will teach you how to use Japanese condiments in your own kitchen, I will show you my homemade fermented goodness that is the secret to Japanese longevity!

In this workshop, we will be making the world famous Ramen and Gyoza my style, fully vegan and nutrient rich which doesn’t go sky rocket the calories, that actually leads your body to be healthier and stronger.
The Ramen and Gyoza we will make are so delicious and satisfying even for everyday meat lovers, I will teach you how to withdraw “Umami” the amino acid of what our taste buds recognize as flavors.

What we’ll use in Ramen:
Soup
- Garlic/Ginger
- Soy Sauce Culture
- Miso
Vegan “Meat” Topping
- Dehydrated Tofu (how to make one if it’s not accessible in your country)
- Garlic/Ginger
- Miso
- Sesame Oil
- Onion
- Five Spice
Other Topping will be:
- Vegetables
- Seaweed

What we’ll use in Gyoza:
- Gyoza Skin (flour and water)
- Cabbage
- Japanese Leeks (I’ll teach you alternative too)
- Garlic
- Onion
- Mushrooms

    Ramen

    Ramen is a noodle soup dish and perhaps one of the most popular Japanese dishes. There are many flavours of ramen, such as Shoyu (soy sauce) ramen, Miso ramen, Tonkotsu (pork bone) ramen and so on. Common toppings are Chashu (braised pork), Negi (green onion) and Nori (dried seaweed).

  • Gyoza

    Gyoza

    Gyoza is a dumpling using wrapping thing dough to hold the inner ingredients. Most commonly, minced pork, cabbage, Garlic and Leek. The origin of Gyoza is from China but it has evolved uniquely in Japan and now quite different from the Chinese one.

My class is fully private, so all the attention goes solely to your group that you can have fun and learn intensively.

Origami lesson is also included in this workshop.
We will be making “Crane”, the reason why I choose is not because it is the most common but Origami Crane has the meaning of “Welcome” here in Japan.
A complimentary small dessert is prepared as well during Origami lesson, I’d love to hear your Japan trip and stories of your country!

I will also introduce you to “Soy Sauce Culture” which makes my workshop stand out of the many others.
The culture is the crucial part of every Japanese condiments and it goes way beyond ordinary soy sauce flavor, I will teach you all about it during the class. It is like magic.

It all may sound intense, but I promise you it is all simple once you attend the class, we’ll have great fun that you will always remember and actually take that skill to home with you!

It might be the first time for you to actually use many different kinds of Miso on your own, and taste condiments using Koji.

Koji is culture from rice or soybeans, commonly mistaken as type of yeast but it’s different from it. Koji is cooked rice/soybeans that have been inoculated with a fermentation culture, it is the secret ingredients for Soy Sauce, Sake, Miso, Mirin and many more of core Japanese condiments crucial for our cuisine.

In my workshop, I will show you what actually that Koji is, how simple and easy it is to use in your own kitchen and you’ll be able to use in every type of international cuisine in the world, that is my promise to all student.

My home is right in a heart center of Tokyo, 5 minutes walk from “Hiroo Station” just a step to Yebisu, Roppongi, Omote Sando, and Tokyo Tower. I’m looking forward to share time with you, and take home piece of Japan with you to your kitchen all over the world!

Yuka is an amazing host and we had a lot of fun with her. Her lesson starts with a warm welcome (she picks you up from the closest train station) and then we folded traditional origami cranes. Then we learnt a lot about fermentation, were able to try different kinds of miso (and sake paste), and then we made vegan gyoza and ramen. Yuka has a great eye for detail and the ramen toppings looked like a rainbow and were beautiful. The gyoza were really the best we had in Japan (and we‘re not even vegan - we just like plant-based food). Her course easily caters to both vegans and flexitarians.
