Welcome to a unique journey into the heart of Japanese cuisine!
First, you will learn about Japanese fermented foods and enjoy a tasting of three different types of miso, along with shio koji and amazake. Discover how each ingredient contributes to the rich flavors of Japanese cooking.
Next, we will explore the world of dashi, the foundation of Japanese cuisine. You will taste three different types of dashi and learn how their flavors differ. Which one will be your favorite?
By the end of this experience, you'll have a deeper understanding of Japan’s essential ingredients—fermented foods and dashi—and become a true Japanese umami expert!
After the tasting session, we will cook a delicious Japanese home-style meal using these ingredients:
* Salmon and cabbage with shio koji mustard sauce
* Fresh salad with amazake dressing
* Nukazuke (Japanese rice-bran pickles)
* Onigiri (rice balls)
* Tofu miso soup
* A dessert made with amazake

    Onigiri is a Japanese comfort food made from steamed rice formed into the typical triangular, ball, or cylinder shapes and usually wrapped with nori(dried seaweed). Stuffed with a a variety of fillings and flavors, these rice balls make an ideal quick snack and are a fun alternative to sandwitches for lunch.

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

  • Miso Soup

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

About Host



My name is Maki. I live in Osaka Japan and I love sharing Japanese home cooking and fermented foods.
I teach cooking classes for people from all over the world. My English is not perfect, but I always do my best to explain everything clearly and make sure you feel comfortable and relaxed.
Japanese food culture is simple, but full of deep flavor and wisdom. I not only teach recipes, but also share the ideas and background behind the food.
I live with a dog, so I kindly ask guests with dog allergies not to attend. I can also accommodate vegetarian guests as much as possible.
Solo travelers, couples, friends, and families are all welcome.
I look forward to meeting people from different countries and sharing a warm and enjoyable experience together.
