    Onigiri is a Japanese comfort food made from steamed rice formed into the typical triangular, ball, or cylinder shapes and usually wrapped with nori(dried seaweed). Stuffed with a a variety of fillings and flavors, these rice balls make an ideal quick snack and are a fun alternative to sandwitches for lunch.

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

  • Miso Soup

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

More than just a cooking class—experience Japanese food culture through everyday dishes and fermentation, just like locals do.

Located in the heart of Tokyo, this 2-hour class is perfect for busy travelers. In a small-group setting, a certified instructor will guide you through easy, delicious recipes using traditional fermented ingredients.

Along the way, you’ll discover how fermentation has been part of Japanese food culture for centuries, and why these foods are valued for supporting everyday health. You’ll also learn about koji, a key element in Japanese cuisine.


Notes:
* Vegan version is available but we will share the kitchen with non-vegan version. Please request for vegan option when you apply.

* Please note that the class may take place at a different kitchen location within central Tokyo. In such cases, you will be notified after your booking.

* This experience is best suited for adults and children aged 7 and above, as the content focuses on learning and techniques.

* Please mention if you have any dietary restrictions, including allergens.

* We use a small amount of a seasoning called Mirin that contains alcohol. The alcohol is removed during cooking, so the dish is safe for children. However, the tasting is not available for children.

Exactly the class I was looking for :) Beyond learning recipes, I wanted more in-depth content to understand the origins of the very different flavors and the nutritional richness of Japanese cuisine. Naoko is a very passionate teacher, and you can tell she designed the class to give people a real introduction to the many aspects of traditional fermentation. The class provided a lot of context on its national importance, history, and health benefits, along with a tasting session. We designed a full menu that I found easy to reproduce at home (I also received the printed recipes). It included basics like onigiri, but also introduced fermented products throughout the different dishes. It was lovely to extend the discussion while eating — and everything was delicious. When I went to the supermarket afterward, so many things suddenly made much more sense! It really feels like my cooking skills have taken a step up. Thank you again for this class, which offers content that’s rare to find elsewhere.
