This is a short course of 2 hours, which starts with a lecture about Japanese fermented foods (especially koji and miso) then we cook lunch together.
1. Cold noodles with pork (or deep fried tofu for vegans): Cold noodles are typical dishes in Japan. We use somen, thin wheat vermicelli. If you have never tried it, discover the new taste! You will be amazed.
2. Two vegetable side dishes using miso: By mixing miso with other ingredients, the dishes become even more versatile, nutritious and delicious.
3. Miso soup: Let me explain an easy way to make miso soup, which will convince you to make it often at your home.
4. Mini dessert using amazake: Amazake is a Japanese fermented food, which is good for dessert.
By taking this class, you will not only learn about cooking but also gain a deeper understanding of Japan especially koji and miso, which are basis of Japanese cuisine and longevity, making your travel even more special!
Fermented foods have many beneficial effects, such as improving gut function, enhancing skin health, and helping to maintain overall well-being.

I spent five years abroad and engaged in trade operations, including food, for many years. As a result, I have gained a deep understanding of the overall food distribution industry, including food additives and labeling, and have been exposed to various domestic and international cuisines.
Moving forward, I aim to promote the excellence of healthy Japanese fermented foods directly to foreigners and host cooking classes to achieve this goal.
Being a health nut, I am fascinated with Japanese fermented foods which is not only about health, but also other aspects such as the country’s history, geography and culture.
