5. Mini dessert using amazake: Amazake is a Japanese sweet fermented food, which is good for dessert.

Our kitchen is located in the heart of Tokyo (Only 10 mins from Shibuya Station via Ginza Line), so you won’t be affected much by the weather!
A certified instructor guides you through easy recipes using traditional Japanese fermented ingredients, with an in-depth lecture in a small-group setting. You’ll also learn about koji, a key ingredient used in many Japanese foods.
The class is just 2 hours long, making it perfect even for busy travelers!
Notes:
* Vegan version is available but we will share the kitchen with non-vegan version. Please request for vegan option when you apply.
* This experience is best suited for adults and children aged 7 and above, as the content focuses on learning and techniques.
* Please mention if you have any dietary restrictions, including allergens.
* We use a small amount of a seasoning called Mirin that contains alcohol. The alcohol is removed during cooking, so the dish is safe for children. However, the tasting is not available for children.

I spent five years abroad and engaged in trade operations, including food, for many years. As a result, I have gained a deep understanding of the overall food distribution industry, including food additives and labeling, and have been exposed to various domestic and international cuisines.
Moving forward, I aim to promote the excellence of healthy Japanese fermented foods directly to guests from overseas and host cooking classes to achieve this goal.
Being a health nut, I am fascinated with Japanese fermented foods which is not only about health, but also other aspects such as the country’s history, geography and culture.

★★★★★Exactly the class I was looking for :) Beyond learning recipes, I wanted more in-depth content to understand the origins of the very different flavors and the nutritional richness of Japanese cuisine. Naoko is a very passionate teacher, and you can tell she designed the class to give people a real introduction to the many aspects of traditional fermentation. The class provided a lot of context on its national importance, history, and health benefits, along with a tasting session. We designed a full menu that I found easy to reproduce at home (I also received the printed recipes). It included basics like onigiri, but also introduced fermented products throughout the different dishes. It was lovely to extend the discussion while eating — and everything was delicious. When I went to the supermarket afterward, so many things suddenly made much more sense! It really feels like my cooking skills have taken a step up. Thank you again for this class, which offers content that’s rare to find elsewhere.
