Ramen is one of Japan’s most popular comfort foods. In this class, we make both the soup and noodles from scratch.
Our soup is full of umami flavor, made with simple ingredients like chicken, pork, dried bonito (katsuobushi), kelp (kombu), and dried shiitake mushrooms.
We don’t use pork or chicken bones, so the broth is rich yet easy to prepare at home.
You’ll also make fresh ramen noodles by hand—from kneading the dough to cutting it.
We top the ramen with homemade chashu (braised pork), soft-boiled egg, green onion, and nori.
You’ll leave with the skills and confidence to recreate it in your own kitchen!
· Gyoza
Gyoza is a crispy and juicy Japanese dumpling filled with minced pork, cabbage, garlic, and ginger.
We make the filling together, wrap each dumpling by hand, and pan-fry them until golden brown.
Many guests love the process of folding gyoza—it’s easier than it looks and very satisfying!
In this cooking class, we will make two of the most popular Japanese dishes: ramen and gyoza!
We’ll start by making the ramen soup. Using simple ingredients like chicken, pork, dried bonito (katsuobushi), kelp (kombu), and dried shiitake mushrooms, I’ll show you how to create a rich, umami-packed broth in a short time. You’ll learn tips for adjusting the flavor so you can easily recreate it at home.
Next, we’ll make handmade ramen noodles from scratch. We knead the dough, roll it out, and cut it into noodles. The chewy texture is something you can only get from fresh, homemade noodles!
Then we’ll prepare the toppings—homemade chashu (braised pork), soft-boiled egg, green onions, and nori—and assemble your very own bowl of ramen.
For gyoza, we’ll mix pork, cabbage, garlic, and ginger to make the filling, then wrap it by hand using gyoza wrappers. I’ll teach you how to fold them nicely, and finally we pan-fry them to crispy perfection.
This experience is not just about eating—it’s about the joy of making food together and learning about cultural differences through warm, friendly conversation.
