The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. Hitomi was an excellent host and teacher. She was warm and welcoming and made us feel comfortable despite never using sushi knives before. Visiting the Kuromon Market was an added plus. In fact, it would be nice to have a little more time to see the market. The sushi-making class was fun. Her instructions were clear and the final meal was delicious and filling. Plenty to eat!

Tomi is a fantastic host. We had a group of 2 adults and 3 children (ages 7,9 and 11) and she was excellent with us all, particularly with the kids. She took us through the intricate preparation involved in Sushi. The ingredients were so fresh and the end result was extremely tasty. Granted, my children love sushi, but their empty boat trays were testament to how good the food was. Big thanks to Tomi - her cooking course was the highlight of our stay.

We completely loved the class! Thank you Hitomi for an incredible experience. Here’s our review about it. My wife and I took a sushi-making class and we completely loved it. Hitomi is a great person, she patiently taught us how to prepare the nigiris from scratch, starting with the vinegar rice, the cuts in every fish/seafood and how to present them. She puts a lot of attention to the ingredients which were very fresh. She had many ingredients including tuna, salmon, a type of white fish, crab, shrimp, eel, scallop, salmon roe, and many more. The location is cozy and perfect for small groups. Overall it’s an amazing experience as we got to know a little bit more about the incredible japanese culture and their customs.
