    Udon

    Udon (うどん) is a type of thick wheat flour noodle. It is similar to Italian pasta, but much thicker. It has been eaten all over Japan as an easy-to-eat popular meal, and a substitute meal for rice dishes. Udon is often served hot as a noodle soup in its simplest form, as "kake udon", in a mildly flavoured broth called kakejiru, which is made of dashi, soy sauce, and mirin. The flavor of broth and topping vary from region to region.

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

In this cooking experience, you will learn how to make authentic Japanese comfort food and traditional side dishes enjoyed in Japanese homes.

You will start by learning the basics of Japanese cooking, including how to prepare dashi and cook Japanese rice.

Then, you will make katsudon — one of Japan’s most popular rice dishes — together with several traditional side dishes.

You will also experience Japanese food culture through seasonal dishes such as kohaku namasu, shiraae, and fruit daifuku.

At the end of the lesson, you will enjoy your handmade meal together with matcha tea in a warm and relaxed atmosphere.

This class is beginner-friendly and designed to help you experience the heart of Japanese home cooking

My name is Cocoro, owner of Kitchen Studio COCO in Osaka.

I am a professional Japanese chef with over 20 years of experience and an international Yakuzen (Japanese medicinal food) instructor.

At my studio, you can enjoy making authentic Japanese dishes such as ramen, onigiri, sushi rolls, tempura, katsudon, and bento in a warm and relaxing atmosphere.

I also explain the “why” behind Japanese cooking techniques, so beginners can enjoy cooking with confidence.

I am also a certified sake sommelier, and guests can enjoy a Japanese sake tasting experience.
