Ramen or ラーメン (as you might have already seen all over Tokyo!) is essentially noodles and soup - a staple dish in Japan.

    Ramen is a noodle soup dish and perhaps one of the most popular Japanese dishes. There are many flavours of ramen, such as Shoyu (soy sauce) ramen, Miso ramen, Tonkotsu (pork bone) ramen and so on. Common toppings are Chashu (braised pork), Negi (green onion) and Nori (dried seaweed).

    Gyoza is a dumpling using wrapping thing dough to hold the inner ingredients. Most commonly, minced pork, cabbage, Garlic and Leek. The origin of Gyoza is from China but it has evolved uniquely in Japan and now quite different from the Chinese one.

Konichiwa! My name is Andrew Baba, but you can call me ramen sensei! I've been a ramen 'Otaku' (having a ramen obsession) since a young child and through years of trials and tribulation, I am now teaching people how to make ramen. I am half Japanese as you might tell from my family name and am fluent in both English and Japanese so be great to have some language exchange and hopefully give you insight into the Japanese ways alongside teaching you about ramen.
I am excited to share my knowledge of ramen with you and help you become a ramen master too! I had a wonderful day from start to finish. I was warmly greeted upon arrival at the restaurant by Andrew. Andrew talked us through the different types of ramen and as a vegetarian, two of us, he explained the how to make the dashi meat based and veggie. . Then we proceeded to wash our hands and don our aprons and we started with washing, chopping and cooking various mushrooms and veggies. The experience was superb. You really get to cook your own lunch instead of just watching. I learnt so much over the next 3.30 hours! The vegetables gyozas were so yummy and the veggie ramen was the best one I ever had. Super delicious and I even made my own noodles from scratch, wow I loved the experience and I recommend it to any one who would like to learn about Japanese food. Wether you are a vegetarian, vegan or meat eater this course is adapted to your needs. Andrew went above and beyond and the day it exceeded my expectations. I look forward to returning to Tokyo and to cook again under your supervision. Arigato gozaimasu Andrew-san.

Taking part in the cooking class was one of the highlights of our Japan trip. As vegetarians (and former Tonkotsu Ramen lovers), we were never fully satisfied with the veggie options at Ramen restaurants, as the soups tend to be rather thin. The recipe from Andrew, however, taught us how to make a thick and delicious veggie Ramen soup packed with flavour, and we could not be happier about it. Andrew was also extremely friendly and knowledged. He made sure everyone was having a good time and answered all of our questions no matter how small or silly! Due to my big interests in ramen making, he showed me how to make both types of ramen broths; Chintan and Paitan - I do remember! ;) Very bespoke class, very knowledgeable about ramen and the various small details of every step as well.
