  • Ramen


    Ramen is a noodle soup dish and perhaps one of the most popular Japanese dishes. There are many flavours of ramen, such as Shoyu (soy sauce) ramen, Miso ramen, Tonkotsu (pork bone) ramen and so on. Common toppings are Chashu (braised pork), Negi (green onion) and Nori (dried seaweed).

    Gyoza is a dumpling using wrapping thing dough to hold the inner ingredients. Most commonly, minced pork, cabbage, Garlic and Leek. The origin of Gyoza is from China but it has evolved uniquely in Japan and now quite different from the Chinese one.

I've been a ramen 'Otaku' (having a ramen obsession) since a young child and through years of trials and tribulation, I am now teaching people how to make ramen. Had a lovely time with Andrew and his class last week. Due to my big interests in ramen making, he showed me how to make both types of ramen broths; Chintan and Paitan - I do remember! ;) Very bespoke class, very knowledgeable about ramen and the various small details of every step as well. Seemed like there wasn't a question, he wouldn't have an answer for! This is a very tailored cooking class; he is a ramen expert and would be well versed to show the ramen way to any level of cook interested in this endeavour Thanks again Andrew!
