    Okonomiyaki is a Japanese savory pancake, made with flour, eggs, shredded cabbage, meat and toppings as you like. This variability is reflected in the dish's name: "okonomi" literally means "to one's liking". You can eat it everywhere in Japan, but especially Okonomiyaki made Hiroshima style and Osaka style are the most famous.

My concept is "I want people to know the real taste." Even for home-cooked meals in Kyoto, it takes time to prepare the soup stock.
When I make okonomiyaki, I also make the dashi from scratch.

This healthy okonomiyaki is made with plenty of dashi stock, which is the basis of Kyoto cuisine, a little flour (rice flour), and cabbage and Kujo green onions.

The dough is light and delicious.

This is a dish that goes well with beer and rice.
