4.Seasonal Miso Soup
Learn to make dashi(broth) from scratch using katsuobushi (bonito flakes) and kombu (kelp). Pair this rich broth with seasonal ingredients to create a comforting bowl of miso soup.
We will begin by preparing Nori Maki (Sushi Rolls). You’ll learn how to spread vinegared rice on seaweed sheets and fill them with colorful ingredients such as sweet omelet, crunchy vegetables, and more. Then, we roll them tightly and slice them beautifully—this is a fun and rewarding process!
Next, you can choose your favorite main dish for the Teriyaki Cooking Session. Select from chicken, fish, vegetables, or tofu. We’ll prepare a glossy teriyaki sauce and learn how to adjust the balance between sweet and savory flavors to match your taste. Watching the sauce glaze over the ingredients is always exciting!
We’ll also create side dishes using seasonal vegetables, cooked simply to bring out their natural flavor. This gives you a chance to explore Japan’s seasonal produce.
Finally, we’ll make Seasonal Miso Soup from scratch. You'll learn how to make dashi (broth) using traditional katsuobushi (bonito flakes) and kombu (kelp). Combine it with seasonal vegetables or tofu to create a nourishing and heartwarming soup.

Hi, I’m Aki. We cook together and enjoy friendly conversation. I’ve always loved traveling, meeting people from different cultures, and exchanging stories. Through cooking, I hope to create a relaxed and welcoming experience—like visiting a local friend’s home.
The class takes place in a rental kitchen in central Tokyo, mainly held at near Shinjuku Gyoen . Depending on availability, the location may occasionally change, but it will always be somewhere with easy access, like Shinjuku, Ginza, or other convenient areas in the city.
Alternatively, the class can also be held at a private home in Koganei City, a quiet residential area about 25 minutes by train from Shinjuku.

Koganei offers a more local experience and is close to the Edo-Tokyo Open Air Architectural Museum, which has ties to Studio Ghibli, and just a few stops from the Ghibli Museum in Mitaka.
