  • Udon

Udon (うどん) is a type of thick wheat flour noodle of Japanese cuisine. It is similar to Italian pasta, but much thicker. It has been eaten all over Japan as an easy-to-eat popular meal, a substitute meal for rice dishes. Udon is often served hot as a noodle soup in its simplest form, as kake udon, in a mildly flavoured broth called kakejiru, which is made of dashi, soy sauce, and mirin. The flavor of broth and topping vary from region to region.

  • Miso Soup

    Miso Soup

Miso soup is a traditional Japanese soup. Soup is made from dashi (Japanese stock) and Miso paste. Common ingredients are Tofu, Green onion and deep‐fried tofu but different from personal preference. Using the type of miso is different from region. In western Japan, white miso is mostly used. in east region, White miso is often used.

Cooking Class Information

In this class, we can cook Gyudon(Japanese beef bowl) together!
There are many Beef bowl fast food stores all over Japan, tells you is a very popular dish, but my recipe is even better and healthier.
I will explain the ingredients and we will start by first preparing the gyudon from dashi, the most inportant basic broth for any washoku.
Then, using the same dashi, we will make miso soup using seasonal vegetables.
We will also make a type of Japanese soul food, the rolled omelet, by using a rectangular frying pan. It’s fluffy and sweet !!
Green tea or mugi tea is served together.
