Matcha is a traditional Japanese powdered green tea with a rich flavor and vibrant green color. During the experience, you'll prepare your own bowl of matcha while learning about Japanese hospitality (Omotenashi) and tea culture.
・Japanese Hot Pot (Nabe)
Japanese Hot Pot (Nabe) is one of Japan's most beloved home-cooked meals. Fresh vegetables, meat or seafood are gently simmered in a flavorful dashi broth and enjoyed together around the table. At the end of the meal, we'll finish the remaining broth with noodles or zosui (Japanese rice porridge), just as many Japanese families do
Start your experience with a Matcha welcome ceremony, followed by a traditional dashi-making experience, where you'll shave katsuobushi (dried bonito flakes) by hand and learn the secrets of Japanese umami.Then, you'll prepare and enjoy your own Japanese Hot Pot (Nabe) from scratch.

Let's meet at Kamakura-Kokomae Station, which is about 5 minutes from my place by car. I'll pick you up there and take you to the experience venue.
First, I'll introduce today's cooking class, explain what we'll be making, and walk you through the schedule and flow of the experience. Then, we'll enjoy a traditional Matcha experience, where you'll learn how to prepare and whisk your own bowl of matcha while discovering the spirit of Japanese hospitality.
We'll make traditional Japanese dashi from scratch and learn about the secrets of umami. You'll also experience shaving katsuobushi (dried bonito flakes) by hand before preparing the broth.
Next, we'll make a traditional Japanese Hot Pot (Nabe) together. You'll prepare the ingredients by cutting vegetables and other fresh ingredients, then add the dashi and simmer everything in the pot. As we cook, you'll learn about Japanese hot pot culture, ingredient combinations, and techniques for creating a delicious and healthy meal.
Once the Japanese Hot Pot (Nabe) is ready, we'll gather around the table, say "Itadakimasu," and enjoy the meal together.
