  • Sukiyaki

    Sukiyaki

    Sukiyaki is completely different; the food is cooked in a sweet and salty soy sauce based broth and full of bold flavors straight from the pot. Besides the broth, the pot used to cook sukiyaki is also quite different from shabu shabu. Traditionally it is cooked in a cast iron pot while Shabu Shabu is cooked in a Japanese clay pot called donabe (土鍋), and the thinly sliced beef (but slightly thicker than shabu shabu meat) are seared first in the pot before adding the ingredients and broth. Despite having different flavor and cooking utensils, most Sukiyaki ingredients are similar to Shabu Shabu, such as leafy vegetables, tofu, shiitake mushrooms, and so on.

Your host, Toshi, spent several years in Ohio working for Honda of America, collaborating closely with local teams and supporting cross-cultural communication. After returning to Japan, he dedicated much of his career to developing and mentoring people.

Co-host Demi was raised in a restaurant family and received culinary training under a Hilton "Dynasty" chef. She has also spent more than 30 years working in English education, translation, and cross-cultural communication, including living in both the United States and Australia.

Enjoy conversations about Japanese culture, daily life, work culture, and cross-cultural experiences in Japan, the United States, and Australia.

About Host



My name is Toshi, and I am based in Tokyo. I host warm and authentic
home cooking experiences, sharing everyday Japanese food and culture
with guests from around the world.

I spent over 40 years working at a global company, including time in
the United States, supporting cross-cultural communication. These
experiences shaped my interest in connecting with people from
different backgrounds.

My partner, Demi, supports the experience with her background in
language education and international support. She also trained under a
professional chef from Hilton Tokyo Dynasty, bringing professional
knowledge into our home-style cooking.

Together, we create a welcoming space where guests can relax, enjoy
home-style dishes, and discover real Japan through conversation.
