My name is Ayako.
Our tempura restaurant is called Tenmasa, and it is located in Okachi-machi, Taito-ku (the area known as Tokyo Old Town). We have been running this family business for three generations.
As the owner of a tempura restaurant, I have watched this traditional Japanese dish become less popular in Japan. Due to tempura’s extensive prep process and complicated manner of cooking, many people have started to perceive it as being too fancy to make at home.
For many years, I have wanted to change this trend. Tempura could become as popular of a fast food meal as hamburgers or kebab, which have enjoyed widespread acceptance among the younger generation.
