  • Udon


    Udon (うどん) is a type of thick wheat flour noodle. It is similar to Italian pasta, but much thicker. It has been eaten all over Japan as an easy-to-eat popular meal, and a substitute meal for rice dishes. Udon is often served hot as a noodle soup in its simplest form, as "kake udon", in a mildly flavoured broth called kakejiru, which is made of dashi, soy sauce, and mirin. The flavor of broth and topping vary from region to region.

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

Cooking Class Information

I will introducing one of the traditional noodles in Japan.
Making Udon noodles from scratch is a fun and unique experience that
requires simple ingredients.
The Udon dough is too hard to knead by hands normally.
By stepping on the dough, a nice and chewy texture can be produced.

Udon soup is made from Japanese typical ingredients, bonito flakes and dried kombu, chicken and some vegetables.
I'll teach you how to make Japanese soup broth "Dashi" from the basic.
It's aromatic and rich taste.
As strawberry Daifuku, it is a popular and simple Japanese sweet.
Making it is very enjoyable. And it's yummy!!

Since this class is taught privately, I will be able to provide detailed information about dishes.
Vegetalian option is also available.

Cooking udons and strawberry daifuku with Junko was a wonderful experience. This was our second class with Junko and, again, we enjoyed every bit of it. Junko followed us carefully during all steps of making udons, the accompanying soup and the daifuku. Everything came out delicious, and the flavours brought us back the memories our our family trip to Japan. I really appreciate that Junko's recipes are not only delicious, but are also well thought and streamlined both for ingredients and execution. Junko is a delight! We booked her Udon Noodle Soup and Strawberry Daifuku class to celebrate a milestone birthday and were blown away. Prior to the actual class, Junko reached out to communicate and extend herself to answer any questions about ingredients or substitutions. Junko was attentive and communicative the entire time. During the class, she was warm, and engaging and truly made every effort to get to know us and make us comfortable from thousands of miles away. An AMAZING time with Junko san making udon and ichigo daifuku for my friend’s birthday!! It was an LA-Tokyo-Tokyo zoom party, and she’s SO fun, we really felt like we made a new friend. I appreciated that she sent an ingredients list in advance, as I was able to easily purchase the unusual ones over Amazon for my friend. And Junko san went above and beyond to help me plan how to surprise my friend with a birthday song, complete with candles.
